Luxury cruise line introduces world’s first floating pastry academy

Constantly striving to innovate and elevate its offerings in the industry, luxury cruise line Oceania Cruises has recently introduced the world’s first ever pastry academy aboard a ship.

Fittingly named The Floating Pastry Academy, it is a multi-year training programme for the cruise line’s onboard chefs. 

“This new academy reflects the respect we share for the traditions that shaped us, and for a passion for culinary excellence at sea,” Chef Eric Barale, Oceania Cruises executive culinary director and a member of Maîtres Cuisiniers de France (MCF - Master Chefs of France), said in a press statement.

The programme is created through Chef Barale’s partnership with Chef Sébastien Canonne, a Meilleur Ouvrier de France recipient and founder of The Butter Book – an award-winning pastry and baking training platform.

Over 200 Oceania Cruises pastry and bakery chefs will be completing the three-year programme that blends theory with practical assessments, which will be done both online and in person.

The Floating Pastry Academy reflects the cruise line’s continued investment in French culinary heritage. 

Also part of its efforts is introducing the La Table par Maîtres Cuisiniers de France, the first restaurant at sea created in partnership with MCF. It is set to debut aboard the vessel Oceania Sonata in August 2027.
