Lemon zest in the pastry dough adds flavour that enhances the pastry and complements the spiced apple slices.
Peel and core the apples, then cut into thin slices.
Prepare the pastry dough in a food processor but be careful not to overwork the dough.
Divide the dough into two portions in a ratio of 2:1, wrap in baking paper and allow to rest in the chiller for about an hour.
Roll out the bigger portion of the dough for the bottom crust to fit a deep pie dish with at least 1cm of overhang.
