Chef brings Thai flavours to Kota Kinabalu hotel for three nights only


Phubase brings more than two decades of international culinary experience.

This July, Hyatt Centric Kota Kinabalu’s On22 restaurant in Sabah will welcome Thai chef Phubase Chuprakong for an exclusive dining collaboration with its head chef Elroy Ernest for three nights only.

The experience is designed for food lovers who enjoy big flavours, local stories and dining moments worth sharing.

Inspired by Thailand’s street food energy, seaside markets and family-style dining culture, the “Sabah Dee Krub” menu brings together Thai spices, Sabah seafood, local produce and bold regional flavours.

Guests can expect a vibrant spread of dishes made for sharing, from Young Papaya Salad with Spicy Som Tam and Dried Shrimp, Grilled Prawn with Pomelo Salad and Coconut Foam, and Tom Yum Crab, to heartier highlights such as Krapao Roasted Chicken, Grilled Grouper in Spicy Lime Ginger Sauce and Fat Crab Fried Rice.

One of the main highlights is Phubase’s Smoked Duck Curry with Berries, a modern take on Thai curry that balances smokey, sweet, savoury and aromatic flavours.

Guests will also enjoy regional relishes including Nam Prik Noom from Chiangmai and Nam Prik Goong Siep, a Phuket-style dried shrimp relish that reflects Phubase’s journey from northern Thailand to the Andaman coast.

The experience ends on a sweet note with Thai and local-inspired desserts, including Black Sticky Rice Pudding with Coconut Milk and Young Coconut, Mango Panna Cotta, Pandan Onde-Onde Cake and seasonal fruits.

Born in Phuket, Phubase brings more than two decades of international culinary experience to the collaboration.

He is the founder of Aquila and Aquaria in Chiangmai, both known for contemporary cuisine with Thai and Asian influences.

His recognitions include listings in the Michelin Guide Thailand from 2023 to 2025, Tatler Thailand’s Best Restaurant 2024 and the Green Kitchen Award in 2024 and 2025.

“‘Sabah Dee Krub’ brings that spirit to life through food, culture and discovery.

“This collaboration gives our guests and local diners a chance to experience the flavours of Thailand through Phubase’s perspective while celebrating the fresh produce and coastal heritage of Sabah,” Schrijver added.

The culinary collaboration will be available from July 9 to 11, from 6.30pm to 10pm. It is priced at RM198nett per person.
