A thousand tastes inspired by the Silk Road

‘Santapan Jalur Sutera’ is an exploration of cuisines and dishes.

RAMADAN brings people together over a shared meal to mark the spirit of the season.

Over in Klang, Selangor, Wyndham Acmar Klang’s T-Cafe invites diners to discover a culinary tapestry influenced by centuries of cultural exchange along the Silk Road through its “Santapan Jalur Sutera” buffet.

Wyndham Acmar Klang executive chef Mohd Azramrizal Ramli aims to present over 1,000 dishes throughout the fasting month, to ensure guests find new flavours upon every visit.

“We have curated a wide selection of dishes from across the Malay archipelago through to China, Central Asia, South Asia, the Middle East and the Mediterranean.

“Each dish tells a story of heritage, harmony and shared traditions.”

Azramrizal, who has previously worked in the Middle East, France and Hong Kong, said that the team drew inspiration from the legendary Silk Road to prepare dishes using traditional cooking techniques and authentic spices.

“Highlights include favourites such as nasi tradisi, kampung-style curries, masak lemak, rendang, sambal, kerabu and street-style dishes,” he said.

“The journey continues with Chinese influences from the Xian and Han dynasties, featuring hand-pulled noodles and Xinjiang-style dishes, followed by the Spice Route with Indian and South Asian specialities rich in aromatic spices.

“This experience is further elevated with Central Asian and Mediterranean selections such as tagine (a slow-cooked North African spiced meat stew with vegetables) and shashuka.

“I think people will love shashuka, pan-seared fish with a spiced sauce of tomatoes, peppers, onions and garlic, which is usually eaten with bread.”

Azramrizal, who hails from Chemor in Perak, said grilled lamb was still the signature dish on the menu.

“Our lamb is marinated for 24 hours before it is grilled.

“We use a mix of aromatics such as ginger, cinnamon, shallots, star anise, cardamom, clove and lemongrass.”

He added that tomato paste, house-made chilli sauce and palm sugar were also mixed in.

For dessert, there are plenty of options, including kuih lompang, kuih lapis, kuih koci and seri muka, as well as assorted bubur, baklava and French pastries.

The Ramadan buffet is available until March 20 from 6.30pm to 10pm daily.

It is priced at RM168+ per adult, RM88+ per senior citizen (aged 55 and above) and RM78+ per child (aged eight to 12).

A special 35% discount, priced at RM109.20+, is available on the final two days, March 19 and 20.
