TRADITIONAL dishes with a modern twist never fail to bring excitement and freshness to the festive table.
The ability to strike a perfect balance between preserving tradition and introducing innovative ideas have resulted in familiar and refreshing dishes that are a delight for festive celebrations.
With this in mind, Imperial Lexis Kuala Lumpur is set to enchant diners with its festive menus for Lunar New Year.
The Imperial Spring Festival sets, available until Feb 12, offer three culinary experiences that combine premium ingredients and traditional flavours with a distinctive modern twist.
The set menus start from RM2,688nett for 10 diners.
A festive meal would be remiss without tossing the yee sang, in this case with the auspicious Abalone Yee Sang with snow pear and crispy fish skin.
The abalone in the yee sang adds a tender, briny richness that complements the dish’s fresh and crisp assorted vegetables.
Thin slices of snow pear introduce refreshing sweetness, balancing the savoury elements with fruity brightness.
The fish skin provides a welcome crunch, enhancing the overall texture with its light, salty crispiness, complemented by the tangy-sweet dressing.
The Double-boiled Sakura Chicken Soup with Matsutake mushroom and fish maw is a delicate yet flavour-packed experience.
The broth is deeply flavourful, with a subtle herbal note that adds refined complexity without overpowering the palate.
The matsutake mushrooms lend an earthy aroma and umami depth, enhancing the overall richness.
Despite its richness, the soup remains light, striking a perfect balance that makes it both satisfying and refreshing.
Another dish worth mentioning is the roasted duck with crispy pumpkin, pickled vegetables and plum sauce, which presents a balance of flavour and textures.
The tender and juicy roasted duck meat is worth every bite especially when relishing its satisfyingly crispy skin.
The twist here lies in the pumpkin which gives a delicate sweetness and light, golden crunch, while the plum sauce provides a fruity finish.
Other highlights of the set menu include Wok-fried Grass Prawns with Barbecue Sauce and Crispy Rice; Steamed Sea Grouper Fish with Superior Soya Sauce; Braised Sha Jing Oysters with Scallops and Black Moss as well as Fried Rice with Waxed Duck, Arrowhead and Foie Gras Sausage.
Refreshing desserts of Chilled Chia Seeds with Lotus Seeds and Longan Juice, and Steamed Nian Gao complete the meal.
Set menu banquet orders require five-day advance reservations and 48-hour advance reservations for dine-in at Roselle Coffee House for a minimum of 10 guests per table.
It is available for both lunch and dinner.
