THE six-month Higher Diploma in European Culinary Management is now offered in the School of Hospitality, Tourism and Culinary Arts, KDU College, with the first intake commencing this month.
This programme encompasses the management aspects of the culinary field together with practical modules.
For the kitchen modules, students will obtain hands on experience in producing different flavours of ice-creams, chocolate work and sugar pulling, topics that are usually only covered in specialised pastry courses overseas.
Management modules include designing and drawing kitchens, human resource and organisational behaviour, learning about the history of European cuisine and food costing, purchasing methods and merchandising.
On completion, students can proceed to Switzerland to complete their BA (Hons) degree in European Culinary Management at International Hotel Management Institute, Lucerne.
