THE transparent cellophane noodles is also known by various other names such as Chinese vermicelli, bean threads, bean thread noodles, crystal noodles or glass noodles.

Made from starch such as mung bean starch, yam, potato starch, cassava or canna starch and water, the noodles are sold in the dried form and need to be soaked in tepid water to reconstitute its suppleness.
