Nation’s diversity reflected in August buffet

THERE is always a reason to celebrate when August approaches as National Day is near.

To celebrate the nation’s independence, the kitchen team at Grand BlueWave Hotel Shah Alam has prepared a sumptuous Merdeka High Tea spread at the Royale Songket Restaurant.

Chefs K. Rathakrishnan and Mohd Firdaus Stanley Abdullah’s 1Malaysia buffet also features an array of Western dishes for diners to enjoy throughout the month.

The highlight of the promotion is the high tea priced at RM62 in conjunction with the country’s 62 years of independence.

The high tea is available every weekend in August, from noon to 4pm with different menus featured on Saturday and Sunday.

“We wanted to serve everything Malaysian, from traditional Malay favourites to delectable Indian food and Western dishes to offer more variety, ” said Rathakrishnan.

The buffet has a variety of vegetables and salad such as Vegetable Crudités with Green Pea Dip, Sliced Smoked Salmon Platter, Cold Steamed Chicken with Marinated Cucumber Thai Style, Turkey Ham Vegetable Salad with Corn Chips and Quinoa Salad with Cherry Tomatoes.

Malay and Indian food lovers will enjoy the Lamb with Red Chillies, Green Lamb Curry with Eggplant, Madrashah Curry Chicken with Coconut Milk and Dhal Vegetable Curry with Crispy Chips.

Rathakrishnan recommended the Lamb with Red Chillies for its spiciness.

“I used different types of chillies such as cili padi, green chillies, red chillies and dried chillies.

“It may sound like it is overwhelmingly spicy but it is not as it has the right amount of spice and taste.

“The key is to balance the amount of chillies added to the dish, ” he said.

A crowd favourite, the Madrashah Curry Chicken with Coconut Milk is Rathakrishnan’s speciality.

The savoury dish’s rich flavour profile will encourage diners to go for seconds.

“I combined curry powder and fresh spices to give depth to the curry, ” he said.

Diners also get to indulge in various Chinese dishes such as Chinese Fried Rice, Squid Dry Chillies, Sweet Sour Fish with Pineapple, Fried Squid in Sweet Sour Sauce and Seasonal Green Vegetable with Herbs.

The Western dishes are equally impressive with the likes of Roasted Chicken with Black Pepper Sauce, Sauteed Garden Vegetables in Light Herb Butter, Foot Long Sausage, Roast Pumpkin, Rolled Beef Sliced filled with Forcemeat roasted in Creamy Mushroom Sauce, Chicken Schnitzel with Lime and Tartar Sauce and Lemon Crumb Fish Fillet with Sticky Tomato Dip.

Chicken satay grilled on the spot is another attraction here.

Hawker favourites are not left out with pisang goreng, cucur udang, cucur ikan bilis and keropok lekor occupying a spot at the buffet.

Burger, hot dogs and pizza are some of the dishes that children might enjoy.

At action stalls, the chefs have lined up options such as chicken rice, nasi lemak pandan, noodles and pasta.

Japanese food such as assorted tempura and sushi are also served because of its popularity among Malaysians.

The chefs also suggested we try the local favourite of ais batu campur for its refreshing taste.

“For the first time this year, we are featuring a lot of action stations. Usually, we only have about three to four stalls but for this promotion, we have increased the number.

“By having action stalls, we are able to accommodate customers’ requests for freshly prepared food. This also helps reduce wastage, ” added Rathakrishnan.

A buffet is not complete without an array of sweet treats and pastries.

Mohd Firdaus is the man tasked with the mission of preparing desserts that leave diners wanting more.

There are Danish pastries, doughnuts and cakes such as American Baked Cheese Cake, Chocolate Devil Cake, Mousse Cake, Praline Cheese Cake, Red Velvet Cake, Tiramisu and puddings.

with Blueberry was silky and filled with creamy goodness.

Children are not forgotten as the buffet has cotton candy and caramel popcorn, sago gula Melaka and even bread and butter pudding.

The highlight of the high tea is the Vibrant Rainbow Cake which was pleasing to the eye and palate.

“It was inspired by the colours of the Jalur Gemilang, of course, ” said Mohd Firdaus.

The Merdeka High Tea Buffet is priced at RM62 per person and the one kg rainbow cake costs RM62 per cake.

Another promotion running alongside is the Merdeka Set for two.

This set features Ikan Siakap Asam Pedas, Ayam Goreng Berempah, Kailan Ikan Masin and white rice, priced at RM62++ for two diners.
