Stirring up a welcome for ‘iftar’

THE buffet impresses even before the first bite, with its enticing food presentation and aromas.

At one of the live stations at Sunway Resort Hotel’s “Jemput Makan” buffet, kambing golek is paired with bao buns to reflect Chinese New Year coinciding with Ramadan.

At another station, a large wok of meat stew is being stirred, while a nearby selection of satay awaits diners at the iftar (break of fast) buffet.

Executive chef Peter Lee Tong Siong said the lamb was marinated overnight in a Sichuan style preparation and slow-cooked for six to seven hours till tender.

Alongside the hearty Mutton Gulai Kawah, the Sup Rempah is drawing attention.

The soup features lamb, beef, tongue and other cuts, each cooked separately to achieve the right texture.

“The beef tongue needs one to two hours to cook, while the lamb is simmered for about 45 minutes,” said Lee.

“Tripe takes a shorter time, while tendon needs longer.

“Chicken is also added, but the proteins must be boiled separately.

“If everything is cooked together, they will overcook.”

The broth is first boiled with chicken feet to give it a thick, rich consistency.

“Some people dilute their soup, but we prefer to keep it thick and full-bodied,” Lee said, adding that the soup is made up of 12 ingredients and takes about six hours to cook.

The Western section also impresses, featuring shepherd’s pie, roast beef with pepper glaze, and chicken roulade stuffed with mushrooms.

The roasted beef striploin, sliced to order, is juicy with a caramelised crust.

One dish that stood out for me was the Broccoli Gratin with Crispy Onions.

The florets are coated in a velvety white sauce that proves rich but not overly heavy.

The topping of crispy onions adds savoury depth and pleasing crunch.

Another enjoyable dish was the Creamy Tuscan Garlic Prawns smothered in a sauce that has a tinge of tomato.

At the Japanese counter, sushi and sashimi are constantly replenished, while the Kampung Nelayan station has seafood ready for grilling.

The Ramadan buffet is available until March 19, from 6.30pm to 10.30pm.

It is priced at RM228+ per adult and RM114+ per child or senior citizen.

Hari Raya Brunch Buffet, from noon to 4pm, will be held on the first three days of Hari Raya Aidilfitri, priced at RM208+ per adult and RM104+ per child or senior citizen.
