Brunei's famous delicacy 'Tapak Kuda' is more than just a piece of cake

BANDAR SERI BEGAWAN (Borneo Bulletin/ANN): Tapak kuda is among the most popular cakes served during festive seasons in Brunei.

Traditionally it comes with a chocolate filling, but it is not uncommon to see bakers coming up with an assortment of flavours and colours.

Wani, who is a home-based dessert seller, shared with the Sunday Bulletin that she learnt to make tapak kuda from her mother, who is an experienced baker, while also admitting to the initial process being quite a challenge.

But once she had mastered the techniques, the process became “a piece of cake”.

With so many home-based sellers fighting for customers’ attention, selling traditional tapak kuda is no longer enough to stand out. So Wani went back to the drawing board and came up with a version that she believed was a cut above the rest.

She named it tapak unicorn. The process of making tapak unicorn isn’t too different as the filling is still chocolate, Wani said, but “we need to divide the batter into six different colours”, which is where the labour lies.

Wani’s tapak unicorn proves to be a hit among her customers. She once sold 400 pieces without the need for social media promotions.

Meanwhile, tapak kuda fan Ain Nasuha has noticed a wider variety of tapak kuda this year, with new fillings such as mint and matcha. She also said that the traditional tapak kuda has gone viral in neighbouring countries, with fans sharing recipes in making what they called ‘tapak kuda original Brunei’.

As reported by The Star, Malaysian dessert maker Nurul Rohaida Salleh has sold up to 1,500 tapak kuda of various fillings such as Nutella and matcha daily at her shop in Mere Raya, Ipoh.
