Fried chicken, for many, is simply hard to resist.
It matters not whether these are chicken parts or smaller pieces dipped in batter and deep-fried, soaked in marinade and thrown into a fryer or coated in breadcrumbs then fried to golden perfection.
There are just so many different recipes from around the world to resort to.
In fact, these days it is common to come across Asian fried chicken recipes that pack in the punch with a touch of chilli and spice such as Korean-style fried chicken and Thai-style fried chicken.
What’s interesting about fried chicken is that it appeals to both the young and old.
It is also common for cooks to deep-fry smaller pieces of chicken which make ideal snacks.
Chicken poppers, tenders, medallions, nuggets and fingers are some of the popular bite-sized chicken treats that are offered on restaurant menus.
They are also a popular dish among children as it is less likely for them to create a mess eating bite-sized chicken pieces compared to a drumstick.
Chicken breast, which is lean meat and cooks fast, is the best part to use when making these bite-sized chicken treats.
These fried chicken pieces can be tossed in savoury sauce, creamy cheese sauce or even sweet sauce to heighten the flavour profile.
I vividly remember my mother tossing batter-fried bite-sized chicken pieces in sweet and sour sauce, which was something I looked forward to each time this dish was prepared.
These days, my taste buds tend to look out for bolder flavours instead of sweet and sour chicken.
I find combining hot sauce, tomato sauce and honey to create a glaze for my chicken dish works well with adults.
It is best to stick to the sweet and sour version for children.
This easy-to-make chicken dish will definitely warm up the palate with its fiery yet sweet allure, and it has proven popular with many who have tried its savoury goodness.
Spicy sweet chicken poppers
2 chicken breasts (boneless and skinless)
1 tsp salt
1 tsp pepper
1 tsp turmeric powder
1 tsp garlic powder
1 tsp chilli powder
1 cup flour
1 tsp full seasoning powder
3 cups oil for frying
¼ cup honey
2 tbsp water
2 tbsp hot sauce
3 tbsp tomato sauce
1 tsp brown sugar
½ tsp salt
Cut chicken breasts into cubes and place in a bowl.
Add salt, pepper, turmeric, garlic and chilli powders to the chicken and mix.
Marinade the chicken pieces for an hour. Cover the bowl and refrigerate.
In a separate bowl, break two eggs and whisk them together.
In another bowl, mix flour and seasoning powder.
Separate the flour into two bowls.
Heat oil in a pan.
Take the chicken piece by piece and dip into flour, then into the egg bath and into the second flour bowl before dropping into the oil.Continue the process — flour, egg, flour before frying the chicken.
Fry the chicken pieces until they turn golden brown.
Remove from oil and set aside to cool.
In a separate bowl, mix honey, hot sauce, tomato sauce, brown sugar, salt and water together.
Add the mixture to a pot and simmer for two minutes, then let the liquid thicken.
Add the fried meat to the liquid and stir, allowing the sauce to coat the chicken pieces evenly. Turn off the heat.
Serve chicken with blanched or steamed broccoli, tomatoes or cucumbers or present it on its own. Enjoy!
