If I were palm oil in your ice cream


Palm oil does not live only in spreadsheets and cargo tanks. Sometimes it lives in small pleasures.

LONG before I knew what palm oil was, I knew what ice cream was. It announced itself with a bell.

Somewhere along the road, an ice cream man would pedal his bicycle cart through the neighbourhood, ringing loudly enough to alert every child and inconvenience every parent pretending not to hear.

The important decision was whether to choose rectangular potong ice cream, wrapped in paper or leaf, or a cone, demanding speed, balance and faith in the Malaysian weather.

Chocolate, red bean, sweet corn, coconut or durian might be available, depending on the vendor and the strength of the family treasury.

Nobody asked for tasting notes or “a delicate finish with hints of tropical nostalgia”.

We pointed. The ice cream man cut it. Coins changed hands. Happiness began melting immediately.

Only much later did I appreciate the irony. The crop I would spend more than 30 years planting, managing, improving and explaining may already have been present in that bicycle cart – in the frozen confection, chocolate coating, wafer or ingredients keeping it smooth.

Palm oil may have entered my childhood long before I entered the plantation.

It simply had the appropriate manners not to introduce itself.

Years later, early in my plantation career, I saw the same ritual at an estate gate. As workers returned from collecting their pay, their children clustered around an ice-cream cart with the urgency of shareholders at an annual general meeting.

Behind them stood rows of oil palms; nearby, the mill processed the fruit.

We planters spoke of yields, extraction rates and throughput. The children were unimpressed.

To them, the plantation economy reached its most convincing form when a few coins became ice cream.

Crop and cone belonged to the same landscape. Perhaps that is why palm oil deserves to be explained through everyday life. It is easy to discuss it as a commodity or export earning. Noticing how palm oil quietly supports ordinary pleasures makes it more memorable.

If I were palm oil in your ice cream, therefore, I would first ask everyone to remain calm.

Put down the magnifying glass. Stop interrogating the cone as though it had crossed the border carrying an undeclared substance.

I may not be inside the scoop. I could be in the chocolate shell, wafer, biscuit pieces, creamy filling or a supporting ingredient whose name sounds more suited to a chemistry examination than dessert.

Before deciding what I am doing there, read the wrapper. That is usually sensible.

First, find me in the ice cream. Not every ice cream contains palm oil.

Malaysia’s food regulations allow ice cream to use milk fat, vegetable fat or both. Only a product whose fat comes solely from milk may use “dairy” on its label. Traditional dairy ice cream therefore relies on milk and cream, while other formulations may use vegetable fats.

But the frozen-dessert counter is a large neighbourhood: dairy ice creams, frozen confections, plant-based products, coated bars, sandwiches and wafer cones.

Palm may appear in several parts of it.

In some frozen desserts, tailored blends of palm oil, palm kernel oil and their fractions can replace part or all of the milk fat.

The purpose is not merely lower cost but also the body, appearance, texture and melting behaviour required of the finished product while keeping it affordable.

This does not mean a manufacturer pours cooking oil into a tub of vanilla and hopes nobody notices.

Different palm-based fats do different jobs. Palm oil is naturally semi-solid and can be separated into softer and firmer fractions; palm kernel oil has its own useful melting pattern.

Blending them can create a fat system firm enough in the freezer yet able to melt cleanly in the mouth, often without partial hydrogenation – the older process associated with industrial trans fats.

In plain language: smooth, creamy and velvety – not watery, limp or waxy.

Properly refined palm-based fats are mild and stable, helping the intended vanilla, chocolate or fruit flavour remain consistent during storage.

They can also serve plant-based and non-dairy frozen desserts.

Remove milk and cream, and another fat must provide richness.

Water cannot, however encouragingly one speaks to it.

Palm kernel oil, palm fractions or blends with other plant oils can be tailored for creaminess, firmness and clean melt.

They are functional ingredients chosen to make the product work.

Palms can also enter in less obvious forms. Emulsifiers help control fat during freezing and build the fine structure around air bubbles; with stabilisers and proper freezing, this supports smoothness.

Some mono- and diglyceride emulsifiers can be palm-derived, although the label may name the additive without revealing the original vegetable-oil source.

So palm may be present even when milk remains the main fat.

The quiet person arranging the chairs was part of the event after all.

Palm kernel oil and its fractions are especially useful in chocolate-style coatings, where a firm set, clean bite and quick melt matter.

Palm-based fats may also appear in wafers, biscuits, fillings, caramel components or chips.

So when someone asks, “Is there palm oil in this ice cream?”, the honest reply is: “Perhaps – but which part?”

Understand them by the job they perform – preferably before the evidence melts.

One fruit, two oils

Palm oil is not one anonymous yellow liquid wandering through the supermarket at night.

From the fruit flesh comes palm oil; from the kernel comes palm kernel oil.

Same fruit, different qualities and jobs.

Think of siblings raised in the same household who chose separate careers: palm oil became the dependable generalist; palm kernel oil joined confectionery and started wearing chocolate.

By separating and blending softer and firmer fractions, manufacturers tailor palm-based fats for frozen desserts, coatings, fillings and wafers.

This is not an identity crisis. It is versatility.

Some enter the wok, some the biscuit factory, and some wait outside the ice cream parlour wearing a chocolate coat.

Ice cream is engineering in a cone

To children and adults alike, ice cream is cold, sweet and preferably generous.

To the food scientist, it is tiny fat droplets in a water-based mix, with air folded in as it freezes.

Large ice crystals make it rough.

Too little air makes it heavy; too much and the customer may suspect he has bought an expensive cloud.

The fat system is central.

Enough must be solid at freezer temperature to support the structure around air bubbles and give body, yet melt cleanly in the mouth so the ice cream feels creamy and releases flavour.

The scientist may use impressive words.

The customer simply says, “Ah, this one is smooth”.

In Malaysia, ice cream must also face an external auditor called the afternoon sun.

Well-designed palm-based fats can provide freezer structure, a velvety mouthfeel and clean melt.

They still cannot repeal thermodynamics.

The shell, wafer and melting test

The coating on an ice-cream bar must remain intact in the wrapper, crack neatly when bitten and melt without waterproofing the mouth.

Palm kernel oil and its fractions can keep a chilled coating firm yet allow it to melt quickly when eaten.

The coating should be strong but not armour-plated; crisp, but not scattered across the shirt.

Palm-based fats help the chocolate remember its responsibilities.

The wafer cone must be light, crisp and strong enough to survive walking, talking, photographing and occasional neglect of gravity.

Nobody praises its engineering. Let it leak onto the hand or attire, however, and everyone becomes a quality-control specialist.

When a video shows an ice cream reluctant to melt, the internet holds an emergency scientific conference. Some blame palm oil.

The truth is less dramatic. Melting depends on the whole recipe and process: fat, sugar, proteins, air, ice crystals, stabilisers, storage temperature and manufacturing conditions.

Palm-based fats may help a product retain its shape longer, but not forever under a Malaysian noon sun.

Given enough heat, even the most disciplined scoop admits defeat.

Science should begin with evidence, not indignation.

Affordability is also part of the story.

Not every family is buying artisanal gelato made from milk collected at dawn from a cow addressed personally by name.

Most consumers want something enjoyable, safe, consistent and reasonably priced.

Palm oil and palm kernel oil are valued not only because they are cost-effective but also because their versatility and stability let manufacturers tailor products for different markets and price points without surrendering texture or enjoyment.

That does not make every inexpensive product good or every expensive one superior.

It means food science serves different consumers.

Premium dairy ice cream has its place. So does an affordable frozen treat shared after school. Pleasure should not require a private banker.

Sometimes democracy arrives in a paper cone.

Do not give me a health halo

At this point, palm oil should not become overexcited and apply for sainthood.Ice cream is still dessert.

Palm oil does not transform it into broccoli.

The nutritional character of a frozen dessert depends on the whole recipe: total fat, saturated fat, sugar, portion size and frequency.

Palm oil may create smoothness, a clean chocolate snap or better stability.

That does not justify finishing a family-sized tub while reading about food science. Enjoy the scoop. Respect the portion. Do not ask the dessert to carry the responsibilities of breakfast, lunch and national healthcare policy.

From certification to conversation

Beyond the freezer lies a larger story, and Malaysia should tell it with confidence. Its palm oil industry is not beginning sustainability today.

Mandatory MSPO certification began in 2020; MSPO 2.0 took effect in January 2025; and digital traceability is expanding through e-MSPO, SIMS and GeoSAWIT.

Behind those systems are smallholders, estate teams, mill personnel, scientists and auditors turning requirements into practice and evidence.

There is room to improve – as there should be.

Sustainability is not a trophy but a discipline renewed with every planting decision, best practices, audit and shipment.

Continuous improvement is how a serious industry remains credible.

Oil palm is the highest-yielding vegetable oil crop, producing several times more oil per hectare than soybean, sunflower or rapeseed.

Replacing it casually may shift land pressure rather than solve it.

The better course is certified, traceable palm oil that keeps improving.

The remaining gap is narration. Palm oil speaks fluently in standards and acronyms; consumers want to know who produced it, what job it performs and why it matters in the ice cream in their hand.

Show them the smallholder, planters, harvesters, mill team, scientists and food manufacturer. A certification mark reassures a buyer; a human story helps a consumer remember.

Palm oil has built evidence; now translate it from plantation to supermarket and from bunch to ice cream bar.

From the bell to the bunch

When I think back, the journey is circular.

As a child, I heard the ice-cream bell before I understood the oil palm.

As a young planter, I watched plantation children answer the same bell amid the oil palm trees.

For much of my career, I dealt with labour, yields, costs, replanting, processing, sustainability and markets.

Yet palm oil does not live only in spreadsheets and cargo tanks. Sometimes it lives in small pleasures.

It may give a frozen dessert body and smoothness.

Its kernel-oil cousin, in a tailored fraction or blend, may help the coating set, crack and melt.

Other palm-based ingredients may support the wafer, filling or emulsifier.

Together, they help make enjoyable foods reliably and affordably.

That contribution deserves to be known through useful products, credible standards and human stories.

Long before I knew palm oil, I knew the ice-cream bell.

Perhaps the crop was already there, melting quietly in the cart, waiting for me to grow up and notice it.

Now the industry must help consumers notice it too.

In a country where the sun is always ready to audit an ice cream, that is no small scoop.
