I’VE been called “the vegetarian who doesn’t eat vegetables” by many of my friends and some of my family purely because I don’t like certain types of vegetables. This is a myth that must be busted because, really, I dislike very few vegetables: ladies fingers, bitter gourd (and all other type of guards), four angled beans and Chinese cabbage. Eggplant used to be on my “hate list” too until I discovered how delicious it tastes when it is roasted – creamy, rather than mushy with a subtle smokiness.
