What is galangal?

I read with much interest your vegetarian rendang recipe but I cannot recollect what ‘galangal’ is! Can you explain what it is? – Q.C. Lee 

Galangal is a large knotty pale yellow rhizome with slightly pink skin and is related to ginger but with a mild flavour. It is referred to as lengkuas in Bahasa Malaysia.
