The triple Michelin-starred French chef wants to get back to his roots.
French chef Daniel Boulud is looking to open a restaurant in his native Lyon, France, an expansion that would mark a personal homecoming and test his chops in a city known as the true heart of French gastronomy.
In an interview with popular food blog Eater.com, Boulud, whose New York restaurant Daniel boasts three Michelin stars, said he’s currently shopping for a small bistro space that can seat 50 people.
“I would love to buy a tiny bistro there and I have been looking for an old place with history,’’ he told Eater.com.
“I want it to be only about 50 seats. I grew up near there and I studied there. I really dream of doing this.’’
Boulud’s vision for a restaurant in Lyon would be a bistro with two menus: one serving classic local dishes such as quenelles – large, poached fish-based (or sometimes meat-based) dumplings – and poulet au vinaigre (chicken and vinegar), the other serving seasonal dishes.
Boulud is household name in New York City for helming some of the hottest dining destinations in town, including, Daniel, Cafe Boulud, Bar Boulud and DB Bistro Moderne.
Recently, the popular chef has been busy expanding his restaurant footprint around the world, opening his latest outpost in Toronto, Canada.
Boulud now has restaurants in Singapore, Montreal, London, Miami, Las Vegas and Palm Beach.
If he does open a restaurant in Lyon, Boulud will join one of the biggest culinary giants in French and international gastronomy, Paul Bocuse, who has a triple Michelin-starred restaurant in the city. — AFP Relaxnews
