THE laurel tree from which the bay leaf is derived from, was important to the Greeks and Romans who honoured kings, poets, Olympic champions and victorious generals with wreaths of these glossy leaves.
The bay tree is native to eastern Mediterranean but has long been cultivated in northern Europe and the Americas.
