2 eggs 80g flour 120ml milk 80ml UHT cream salt, pepper and nutmeg to taste
Filling 100g tasty cheese (eg emmental, cheddar, blue), grated 100g salmon, sliced or cubed 150g broccoli, cut into small florets
MethodFor the batter
In a mixing bowl, combine the egg and flour. With wire whisk, beat until smooth. Add the milk and cream, whisk, and season to taste.
To put together
Grease a cupcake or muffin tray. Divide the salmon, broccoli and cheese among the individual moulds. Give the batter a stir and pour into the moulds almost to the rim.
To bake
Preheat the oven to 180˚C. Bake for 15 minutes or until just lightly browned.
TIPS
Use smoked salmon for a smokey flavour.Vary the flavour by substituting the salmon with tuna, bacon, mushroom, pitted olives, etc.
Substitute with other vegetables such as leek, potato, brinjal, semi-dried tomato, asparagus, spinach, etc.
Sauté the bacon, mushroom, leek, brinjal to cook and brown them to bring out the taste before adding.
Add herbs and spices.
Line mould with paper cup if desired.
Serve as a side to a leafy salad for a complete meal.
