The celebrity British chef is building a wood-burning oven – to make said pizzas – at Heathrow.
New details have emerged on the Heston Blumenthal eatery slated to open at Heathrow Airport in London this summer, including the concept, menu and name.
Inspired by the celebrity chef’s cookery TV show In Search Of Perfection, The Perfectionists’ Cafe will feature popular recipes like pizza, burgers and fish and chips that have been developed with elaborate research and a dash of science.
To maximise the juiciness of the meat, for instance, beef patties will be made by grinding all the meat grains in the same direction.
The pizza recipe is also the product of trial and error and a trip to Naples, in which Blumenthal and his team tested the optimal temperature of pizza ovens for achieving a crispy, chewy crust characteristic of Neapolitan pizza.
And to replicate the same authentic pizza experience in London, Blumenthal has ordered the first wood-burning oven to be built at an airport.
The restaurant concept was also developed to pay homage to the glamorous days of 1960s air travel, when it was mostly reserved for the upper echelons of elite society, and travellers donned suits, ties, heels and hats.
The cafe, set to open at the Queen’s Terminal in Terminal 2, will offer foods to go for travellers in transit but also offer an eat-in dining area for those with more time.
Travellers will have a choice between Gordon Ramsay and Blumenthal at Heathrow once the cafe opens in June, while Jamie Oliver also has airport outposts of his restaurant empire at Gatwick. — AFP Relaxnews
