ARTISTRY reigns at Arte Restaurant in Penang, influencing everything from the creation of dishes to characterising the refined space they are enjoyed in.
Every plate at this establishment along Argyll Road in George Town is a work of art that celebrates top quality ingredients and unexpected flavours.
Take the Pan Seared Hokkaido Scallops — a popular entree which head chef Jay Tey recently refreshed with raisin vinaigrette, cauliflower puree, basil leaves and edible flowers.
Equally luxurious is the Treasures From The Sea that has blinis topped with sturgeon caviar, pollock roe and creme fraiche, alongside a yuzu-laced sea urchin egg custard with shimeiji and shitake mushrooms.
The pretty dishes are right at home in the dining area lined with beautiful artworks by prominent local and international artists. Gourmands truly get a colourful feast for the senses.
“Our emphasis is on spotlighting fresh and quality ingredients, then elevating them with unique sauces.
“We try to pair flavours that people don’t normally think of,” Tey reveals.
An excellent example of that is the Grilled Australian Lamb Rack. While it has a mint herb crust that most would consider the natural complement, there is also a house-brewed espresso sauce to take it to another level.
The resulting harmony of sweet, bitter and umami notes makes one go back for more. Some acidity is afforded by grilled pearl onions, while deep fried kale and barley risotto add texture.
“Growing up near a coffee roastery, I remember lovely aromas permeating the neighbourhood every morning.
“I’ve always wanted to incorporate coffee into a dish, and the lamb proved ideal,” Tey said.
Fish lovers have to try the Pan Seared Patagonian Toothfish (also known as Chilean Seabass), that comes with 62°C slow-cooked egg, poached leeks, sauteed maitake mushrooms, green pea puree and a kombu beurre blanc.
And with an indulgence like the Grand Marnier Souffle for desserts, it is easy to see why Arte was named among the 10 winners in the recent iNPenang Best Restaurants Awards 2018.
Its upper floor art gallery space can host private functions for between 25 and 40 pax. Every evening, it transforms into a cosy lounge offering light bites and liquor.
