Australia’s seafood waves you over via Singapore

Some of the best seafood can be savoured in Australia.

Raise your hand if you hanker for seafood ... and travelling! If that’s you, then Australia is the place to go to. You will get a wide range of quality, fresh seafood in all its seven regions and the capital territory.

Peter Poulos, owner of Peter’s Fish Market at the renowned Sydney Fish Market, gives us the low-down.

> New South Wales is famous for its Sydney rock oysters (endemic to Australia and New Zealand) and wild species of snapper and John Dory which are caught along the coast. Head to Sydney Fish Market for oysters, freshly shucked on-site, or learn to whip up dishes at the resident Sydney Seafood School. Too tiring? Then dine at the Flying Fish Restaurant nearby. On the South Coast, celebrity chef Rick Stein’s restaurant can be found at Bannister’s boutique hotel.

> In Canberra, Cape Cod Seafood Restaurant serves up modern Australian dishes. For the catch of the day, the renowned Fyshwick Fresh Food Markets offer freshly shucked Sydney Rock and Pacific oysters, while Sea Harvest stocks Australian-caught seafood and prepares fish for quick home-cooked meals.

> If you’re hankering for wild barrumundi in the Northern Territory, you can savour them to your heart’s content from March to October. Or be spoilt for choice fishing for your own barramundi, longtail tuna and Spanish mackerel, cooked fresh at Arnhemland Barra Fishing Lodge. 

Darwin Fish Market is a good bet for live mud crabs and red snapper.

> South Australia offers pretty good Rock lobster, whiting and green prawns. Follow Eyre Peninsula’s seafood trail for a culinary journey of discovery. 

In Elliston, visit Pedro’s Crayfish to hand-pick your own, get it cooked on the spot for a beachside picnic, and meet the farmer on a tasting tour at Pure Coffin Bay Oysters. At Glenelg, sample simple seafood dishes at Fish Restaurant.

In Far North Queensland, the climate is perfectly suited to saltwater barramundi, plus tiger and Crystal Bay prawns. You can also get your fill of the famous Balmain and Moreton Bay bugs and spanner, Blue Swimmer and mud crab. 

Join Kuku Yalanji Cultural Habitat Tours to catch crabs and scallops on a spearfishing trip near Port Douglas or enjoy some local seafood at Zinc Restaurant & Lounge Bar. Brisbane’s Swampdog offers classic fish and chips and other dishes using fish that have sustainable certification from the Australian Marine Conservation Society.

> Tasmania is mainly known for its lobsters and Pacific oysters; you can also pick up flathead and octopus and yes, abalone, which is popular in Asian cuisine. Want more action? Go trout-fishing with Rod & Fly in Huon Valley, or fly-fishing with Josef Chromy Wines near Launceston. Or join a tour or cruise with Pennicott Wilderness Journeys around Bruny Island, for fresh abalone and crayfish straight from the water.

> Victoria’s lake regions teem with flathead, snapper, John Dory and silver dory. Plan a trip to the self-described “ocean-to-plate” restaurant, The Atlantic. Gone Fishing runs chartered boat trips in Port Phillip Bay and the Bass Strait to show keen anglers the best spots to find King George whiting, yellowtail kingfish and snapper.

> In Western Australia, snapper and sand whiting can be had at Geraldton while the lakes at Clover Cottage on the southern coast is good for fly-fishing brown and rainbow trout. Pick rock lobsters during the Reefwalker Adventure Tours or see how they are processed on Lobster Shack tours.
