Striking a balance between the old and new

I WAS enjoying a traditional dish at a local restaurant when I noticed a fine inscription on the bowl in which it was served. It read: “Beauty lies where rich heritage and modern spirit meet.”

This pretty much described the aura at the restaurant where the owners are striving to preserve traditional foods amid the influx of modern cuisine.
