Use of liquid nitrogen a safety issue


I REFER to the report “Smoking desserts come with a warning” (The Star, Dec 21). The latest gimmick is the use of liquid nitrogen and dry ice in the sale of “smoking cookies and desserts”. The use of liquid nitrogen allows the dessert to emit “smoke” and attract the attention of patrons.

Liquid nitrogen is extremely cold at -196°C. Our normal body temperature is 37°C. The difference in temperature is 233°C. When liquid nitrogen spills onto a person, the person could suffer cold burn.
