MANY may have heard of oxtail, chicken or mutton soup, but what about gearbox soup? It is actually a bone marrow soup, using cow’s knuckle joint as the main ingredient for the concoction. Apparently the joint resembles a car’s gearbox, hence the name.
During this fasting month at Season’s Cafe, Grand Seasons Hotel, the soup does not come on its own. It’s usually served with a selection of other sliced meat, heart, tongue and stomach.
