DURING Ramadan, many Malaysians will recall their memories of buka puasa, the communal meal to break one’s fast.
Be it a home-cooked dinner or one in restaurants with family or friends, many may have fond memories.
This year, those breaking their fast at buffets hosted by restaurants at Hilton hotels across Malaysia will create new memories as they savour dishes that have been given creative touches and imaginative presentations.
At Vasco’s in Hilton Kuala Lumpur, executive sous chef Ridzwan Rasit has presented a range of refreshing appetisers such as Young Mango Salad garnished with Dry Plantain and, with ethical consumption in mind, Cage-Free Egg Salad with Green Herb Emulsion.
Main course options are Australian Lamb Neck Asam Pedas and Australian Beef Short Rib with Coconut Flakes and Strawberry Sambal – the latter is an unusual combination of a savoury gravy with an unusual addition of sweetness.
For desserts, guests can enjoy modern sweets with traditional flavours.
Crema Catalana pudding is given a localised touch with the addition of black glutinous rice and pandan flavour while the cheesecake has cendol and is flavoured with Muscavado sugar.
The Ramadan showcase buffet at Vasco’s is priced at RM238nett per adult and RM119nett per child (six to 12 years old).
Over at Paya Serai Restaurant in Hilton Petaling Jaya, diners can break their fast with sweet appetisers like Coconut Milk infused Glutinous Rice with Sweet Potato.
There are also savoury choices like Pie Tee filled with Fiddlehead Salad, Mushrooms and Crispy Fried Quail.
Hilton Petaling Jaya executive sous chef Badrol Mohd Nor will be preparing main courses such as Steamed Meatballs with Onions and Chilli Preserves in Thick Chilli Padi Gravy as well as Mantou Buns with Sichuan Barbecued Lamb.
After-meal treats include the Butterfly Pea Flower Mashed Tapioca with Palm Sugar Water and Cendol Panna Cotta with Honeycomb among the options for those with a sweet tooth.
The Ramadan Hidden Treasures dinner buffet at Paya Serai Restaurant is priced at RM158nett per adult and RM79 nett per child until tomorrow, and from March 27 to 29.
From March 6 to 26, the buffet is available at RM218nett per adult and RM109nett per child.
There is also an option of booking a private dining space for up to 10 people at RM300nett, or 14 people at RM500nett per room, inclusive of starters and a beverage tower.
