WESTERN cuisines often take centre stage during Christmas season, but incorporating local cooking techniques and ingredients can lend a distinctive flair to the spread.

That’s the approach Sedap restaurant at Pullman Kuala Lumpur City Centre Hotel & Residences is taking.

Executive chef Fong Teck Fei, said, “We want to tailor our dishes to suit Malaysian palates. Our turkey is marinated using local techniques and enhanced with a variety of herbs and spices.”

The turkey dish, infused with a zesty orange brine, delivers a juicy and tender bite, complemented by a golden, crispy skin that adds an irresistible crunch.

Another standout is the Roasted Beef, seasoned to perfection to achieve a rich, savoury crust and robust flavour.

The Crusted Lamb Rack stands out, as does the Roasted Chicken Leg, glazed with maple syrup offering a caramelised exterior that pairs beautifully with its juicy interior.

The Spiced Duck Leg with Truffle Sauce elevates the spread with its spicy, aromatic meat, matched by the luxurious creaminess of truffle.

Comfort foods like Pepperoni Pizza as well as chicken and beef burritos are available as well.

The spread also has a range of seafood options, with the Salmon Fillet in Creamy Green Pepper Sauce standing out for its subtle balance of flavours that enhances the fish’s natural richness.

Not to be missed is the Stuffed Jumbo Crab Meat Deluxe, which is well-seasoned.

Rounding out the savoury selections are Braised Baked Potato with Orange Cheddar Sauce, Braised Brussels Sprouts with Crispy Chicken Strips, Braised Red Cabbage with Green Apple, and Roasted Butternut Squash Soup.
