Add eggs one at a time, beating until fully incorporated before adding another egg.
Roll the dough into small balls of about 2cm, coat the balls in a cinnamon-sugar mixture.
In a large bowl, cream the butter and castor sugar until light and fluffy.
Place the coated dough balls onto the prepared baking sheet, spacing them about 3cm apart.
