Whenever Lenny Go’s mother comes to visit from Medan, Indonesia, packed in her suitcases are bags of mocha paste and spekoek powder. The latter is a spice mix of cinnamon, cloves, mace and cardamom which gives the Indonesian layer cake its authentic taste.

It is a heavy task as the total weight of the ingredients is equivalent to six bricks. But the 36-year-old Go is insistent on keeping the flavours her layer and spongy honeycomb cakes original.
