A GOOD abacus yam dish, according to Raymond Sim, is one where the discs that resemble the ancient calculating tool have a soft texture yet maintain the yam taste.
“Ideally, the yam and tapioca flour portion should be 2:1,” said the owner of Union Tradi Food, a restaurant that specialises in traditional Hakka and Teochew delicacies.
