MEDITERRANEAN winds have blown into Sigi’s Bar and Grill, offering gourmands in Penang mesmerising flavours for a limited time only.

With a special menu crafted by award-winning guest chef Fabio Polidori, the seaside eatery of Golden Sands Resort is the place to be.

The Italian — currently executive chef of the Shangri-La Hotel, Qingdao in Shandong, China — presents starters like Beef Keftedes, or juicy meatballs with Tzatziki dip.

Equally appetite-rousing are the Gambas Bravas that pairs chilli-grilled prawns with sweet potato and aioli, and Pondicherry Soup made with Indian spices.

These diverse flavours come from the chef's globetrotting, having spent 23 years working in five-star luxury properties across Europe, the Middle East and Asia Pacific.

His inventive cuisine has since garnered him numerous accolades including Chef of the Year 2015 from the TV programme, You Are The Chef, in Shanghai.

Like many Italians, Polidori — a native of the small town of Fossombrone in the Marche region — grew up in a family where food played a big part of daily life.

“My mum is a great cook. We got our produce directly from farmers, and often made breads, pizzas and roast meats in the big oven we had in our garden,” he revealed.

Polidori, who was recently in Sigi’s to run a tasting dinner and pizza-making demonstration, stresses, “While I like to experiment with food, I also believe in keeping it true to its origins.”

His signature mains include the Moroccan Lamb Tagine. With a succulent shank alongside couscous, it is a hearty treat best shared with good company.

Otherwise, try his take on Potato Gnocchi, a classic Italian delicacy which he pairs with spinach, sun-dried tomatoes, buffalo mozzarella and basil pesto.

Just as delicious are the Saffron Risotto with scallop, green asparagus, lemon and cocoa powder, Affumicato Pizza with smoked salmon, artichokes and ricotta cheese, and the Harissa Salmon Steak with beetroot and squid ink.

For desserts, there are Blueberries, Classic Tiramisu and Panna Cotta Mont Blanc. Diners can also have wine pairing with Beringer vintages.
