With sharp-edged fibrous leaves that can cut your finger, lemongrass clumps appear messy but the bulbous base can do wonders when added to certain recipes and is often used in South-East Asian cooking.
The lower part of the lemongrass stalk which is pale green, pink and light yellow is refreshingly tart, clean and citrus like with peppery notes.
