Cradled lovingly in a (locked) glass case at the entrance of Royal Canton are golden fish maws from male cods and soon fund from the Indian Ocean, Japanese Thorny sea cucumbers, precious ovals of Amidori and Yoshihama abalone, and wispy cakes of bird’s nest.

They are treated with a reverence reserved for jewels, and with little wonder: “In this glass case, we have about half a million ringgit worth of dried seafood!” says Royal Canton co-owner Gan Kok Beng.
