Uppuma (also written as upma) is a thick pudding-like dish, popular among South Indians and Sri Lankan Tamils. The dish, usually eaten for breakfast or as a snack, was traditionally made from coarsely ground rice flour, but it can also be made from semolina (suji or rava), rice vermicelli (sevai) and even ground peanuts.
Semolina is wheat that is processed into tiny grains after the wheatgerm is removed. It can be made into kesari, a halva-type cake, and is used in rava thosai. Fish and vegetables are sometimes rolled in fine semolina before deep-frying, which results in a crisp coating.
