Nostalgic family dishes to evoke memories

YOU can’t go wrong with a meal built around classics.

Drawing inspiration from family recipes and traditional methods, InterContinental Kuala Lumpur’s Serena Brasserie is presenting the “Sajian Nana Dulu & Kini” buffet.

“When I was a child, these were the dishes that regularly appeared on our dining table,” said executive chef Rudy Junaidie.

“The team also uses traditional techniques to bring out the flavour of food, like serving in bamboo or coconut.”

One example is the Gulai Kering Tetel Kukus Buluh featuring slow-cooked beef in heritage spices served in bamboo for a woody aroma.

While from the grill, there’s ikan bakar with a range of sauces.

The chilli-coated ikan selar was particularly enjoyable with the sambal limau kasturi.

The Gulai Nangka Ikan Masin was another highlight and surprisingly not overly salty.

The cut salted fish made it a comforting dish.

While typically not the main feature of a buffet, the kerabu selection was good and I really enjoyed the inclusion of pomelo.

The sambal station also stood out with at least five different types, including a pungent tempoyak which was well balanced.

Among the live stations, the Sup Campur Berempah “Wak Shukur” proved to be a favourite.

Flavourful and mildly peppery from its spice blend, it is served with a choice of beef or chicken.

Other buffet highlights include Afghan Whole Lamb, Oven Roasted Orange Honey Glazed Chicken Galantine and Barbecue Beef Brisket.

There are also traditional crowd-pullers such as lemang, ketupat, rendang tok, chicken serunding and bubur lambuk.

Meanwhile, the seafood spread featured a seasonal selection including fresh tiger prawns and oysters.

The buffet, from 6.30pm to 10.30pm, is until March 18.

It is priced at RM288nett per adult and RM178nett per child (aged six to 12).
