The burnt cheesecake trend has been taking the Internet by storm in a cream cheese frenzy this year.
Due to the global pandemic and lockdowns, cheesecake enthusiasts, who had limited avenues to satisfy their cravings, resorted to baking in their own kitchens.
The burnt cheesecake, also known as the Basque burnt cheesecake, went viral and became a must-have recipe.
Google Trends showed a sharp increase in search queries for burnt cheesecake in mid-March.
Despite tapering slightly, it remains a top searched item in two countries — Brunei and Malaysia.
The recipe for burnt cheesecake took many by surprise as it requires only a few ingredients, namely cream cheese, sugar, eggs, whipping cream and a little flour.
All these ingredients are combined and baked at a high temperature of between 200°C to 220°C for 50 minutes.
Originating from the town of San Sebastian in Spain, the cheesecake with a burnt appearance is believed to have originated from the La Vina bar in the 1970s.
Singed at the top with colours ranging from dark brown to a darker shade, the cake’s secret is in its beautiful cream- coloured, gooey, melt-in-your-mouth centre.
Variations of the burnt cheesecake have since cropped up, with newer creations featuring flavours such as matcha, Earl Grey and durian.
Another innovative adaptation is the infusion of colours from natural ingredients, such as light green from green tea powder, pastel purple-blue from butterfly pea flower and light pink from dragonfruit.
Rather than using the double-layered baking paper, some versions feature Graham crackers as the cake’s crusty base.
