Auspicious dishes take centre stage

THE Lunar New Year has scurried in for 2020, heralding the Year of the Rat.

At Evolution Cafe in Renaissance Kuala Lumpur Hotel, its executive chef Edmund Ng and executive sous chef Kok Chee Kin have prepared a decadent nine-course dinner that will please everyone, with its traditional flavours and modern food trends and presentation.

Dubbed the New Year Happiness Menu, all the dishes have an auspicious ring to them, starting from the Fortune Yee Sang and ending with the Fancy Duet dessert.

Apart from the refreshing ingredients of shredded white turnip, carrots, yam, pickled ginger and pomelo for yee sang, different seafood options besides fish are also available.

The starter in a multi-course meal is often a good indication of the quality of the rest of the dishes. The Double Happiness combination platter goes beyond expectations as it is laden with so many appetising morsels with lucky names such as vegetable money bag, fatt choy dumpling, golden crispy beard prawns roll, four treasure rainbow roll and crispy double egg yolk cake.

This set menu is heavy on seafood, delving into a sumptuous Sea Treasure Bouillon with enoki mushroom next, followed by Golden Crispy Prawns in spicy garlic sauce to signify laughter and joy (the Cantonese word for prawn is “har” which rhymes with laugh) and Steamed Sea Grouper with Cabbage in premium soy sauce, to connote “swimming in wealth”.

The prawns were fresh and succulent, accompanied by salmon cheese breaded spring rolls in the same dish, a unique creation that had a nice crunch on the outside that did not feel oil-laden.

Sea grouper tends to be dry and it has to be steamed longer to be thoroughly cooked. Evolution Cafe’s version was perfectly done as the texture of the flesh was still springy and juicy.

There will definitely be more than enough good fortune to tide you over with the Sun-dried Oysters, Fatt Choy Fu Kwei Abalone and Broccoli.

Most of us were already very full but the tasty Egg White Fried Rice with Crab Roe was irresistible, and dinner ended on a sweet note with red bean and glutinous rice dumplings and New Year Nian Gao (sticky rice cake).

If a set menu is not to your liking, guests can also feast on delightful offerings from the buffet counter and pile their plate with favourites such as Steamed Whole Fish in Light Soy Sauce, Baked Tiger Butter Prawns with Crispy Prawn and Cheese Rolls and Steamed Glutinous Rice with Assorted Meat in Lotus Leaf and Vegetable Money Bag.

An assortment of New Year cookies such as kuih kapit, kuih bahulu and peanut cookies will be available at the dessert counter.

The nine-course set menus start from RM1,888 nett for a table of 10 people and will be available until Feb 8. Other options include the Prosperity Menu at RM2,088 nett and the Longevity Menu at RM2,288 nett for 10 people per table. Diners can also opt for a specially curated luxurious nine-course reunion set with a choice of either the Happiness, Prosperity and Longevity menus, hosted at any of the event venues within the hotel, subject to availability.
