Celebrating food of the season

Mohd Rais has prepared a festive feast to get diners in the Christmas mood.

NOT having snow in Malaysia does not make Christmas any less festive in our humid climate.

Aloft Kuala Lumpur chef de cuisine Mohd Rais Effendi is helping ensure tourists and locals alike enjoy the season by preparing an array of dishes to fit the occasion.

“Although there is no winter here, we can still celebrate the food, ” he said, adding that a special winter menu would be made available in Nook’s Christmas spread from Dec 6 to 30.

Roast turkey and yule logs will likely be on every diner’s mind, hence Mohd Rais said customers would find Roasted Brine Turkey with bread chestnut stuffing, cranberry jam and giblet sauce.

“Turkey meat is usually dry so we have to marinate it with spices and herbs for at least eight hours for a 4kg bird, before roasting it, ” he said.

The turkey is cooked in a slow-roast for two hours. The chef also prepared a chestnut stuffing for the turkey, with bits of smoked duck and brussel sprouts, served at the carving station.

If you do not fancy turkey, fret not as there are other meaty dishes such as Prime Rib with Thyme Sauce, Roast Beef with Garlic Sauce and Roast Lamb Leg.

There are also alternatives to hearty meat available in the buffet spread – Seabass En Papillote is one, alongside Yorkshire Pudding, pizza and shepherd’s pie.

Fans of salmon dishes will be pleased to know that Mohd Rais will be creating a special corner on Christmas Eve featuring Smoked Asian Marinated Whole Salmon with Cream Dill, Salmon Yule Log and Salmon Tartar.In addition, there will be an array of seafood daily. On the buffet menu are Poached Prawns, Slipper Lobster, Mussels, Crab, Bamboo Clam, Scallop and Squid to go with sauces such as wasabi mayo, Thai chilli dip, shallot vinaigrette, cocktail sauce and hot sauce.

Local favourites such as Sambal Udang Petai, Daging Goreng Kunyit, Ayam Berempah, satay, Butter Prawns, Lemon Chicken, Sarawak Laksa and Chilli Crab are also served for those looking for Asian delights.

My favourite part of a Christmas buffet has got to be the dessert table, and at Nook there is not one but five yule logs served.

I was pleasantly surprised when Mohd Rais proudly showed me the different log cakes to complement the classic chocolate version.

“Instead of just the same chocolate edition we have every year, I thought it would be nice to have something extra to treat our diners, ” he said.

The yule logs consist of Mango Chocolate, Vanilla, Cocoa Chocolate, Coffee and Ivory Raspberry flavours.

Among the other sweet treats in the dessert section are Mix Berry Pavlova, Black Forest Shooter, Cherry Pumpkin Clafoutis, Kaya Profiterole, Peach Tart, Mini Cherry Cheesecake, Chocolate Creme Brulee, fruit cake, Chocolate Fountain, Caramel Popcorn, Christmas Pudding, Ginger Cookies, Ice Cream Potong and Tong Yuen with soy milk.

Nook’s Christmas Eve buffet dinner is priced at RM128nett per adult while the Christmas dinner buffet is priced at RM118 nett. Dinner is available from 6.30pm to 10.30pm. Christmas Day lunch is priced at RM100nett per adult.
