First instant noodle product made from dragon fruit produced in Vietnam

HO CHI MINH CITY, Jan 29 (Bernama): Scientists from Vietnam’s Centre for Experiment and Practice under the Ho Chi Minh City University of Food Industry (HUFI) have successfully researched and produced the first instant noodle product with dragon fruit ingredient in Vietnam.

According to Vietnam News Agency (VNA), the product is produced using nanotechnology, which helps maintain the colour and maximum nutrition value of dragon fruit in the noodle.

It is the result of the joint efforts between the Saigon Institute for Economic Science and Technology, Thanh Long Binh Thuan Co Ltd, and Caty Food Co Ltd.

The development of the product is expected to help enhance the value of dragon fruit and ensure the consumption of the fruit.

Meanwhile, VN reports that the Vietnam Flour Corporation (Vikybomi) has created new food products made from wheat flour and farm produce such as dragon fruit and watermelon amid a reduction in fruit exports to China.

Huynh Kim Chi, company chairwoman, said that her company had successfully come up with a recipe for fresh dragon fruit noodles, which are selling well at a noodle shop in Can Tho City.

Due to the nature of her business, which supplies flour materials, her company would not sell fresh dragon fruit noodles directly to consumers, but would transfer the recipe for free to manufacturers to help consume more dragon fruits.

In the future the company would create more new recipes with farm produce, she said.
