THE ONE dish that has eluded Hong Kong-based celebrity chef Hugo Leung Man-To, despite having visited Malaysia over a period of more than five years, is the pucuk paku (wild fern shoots).

“I’ve always wanted to try it but I am told it’s not easy to find and not many restaurants serve it,” said Leung, adding that the vegetable cannot be found in Hong Kong.
