THE secret to a delicious mooncake is in its sugar syrup, said Yong Pin Restaurant chef Chen Seck Yin.

The 34-year-old chef, who took over the mooncake trade from his father six years ago, said if one does not cook the sugar syrup well, the colour and consistency of the mooncake will not be nice.
