EVELYN Tan carefully presses a mould to shape the pastry then moves on to scoop dollops of pineapple jam, seemingly oblivious to the noise made by her two young children playing in the living room.

Tan said she was accustomed to working under such circumstances but stops to discipline her daughter and son whenever required.
