CHEF Markus Dybwad knows a lot about cold water seafood but ironically, Telemark in south-eastern Norway where he hails from, is far off from the coast.

Describing the area as a place filled with lush forests, valleys and mountains, Dybwad’s face breaks into a smile as he swipes the screen on his mobile device to show photos of the county he grew up in.
