Region recognised as hotbed of culinary innovation.
Michelin has announced plans to publish a separate guide for Nordic countries in April.
The move signals a recognition that the region remains a hotbed of culinary innovation and haute gastronomy, fuelled by the wild popularity of chef René Redzepi’s Copenhagen restaurant Noma.
Though the restaurant, which has been credited with popularizing the foraging trend worldwide, was named the world’s best restaurant two times by judges at Restaurant magazine, it failed to move from its two-Michelin-star status this year.
The city is also home to a culinary champion, as Danish chef Rasmus Kofoed was 2011 winner of the Bocuse d’Or, a cooking competition referred to as the Olympics of the food world.
The new guide will cover the gastronomic scene in cities across Sweden, Norway, Denmark and Finland.
“The Nordic countries have an exceptionally rich culinary heritage, and Nordic gourmet dining features a wide variety of local produce and a cooking style that combines the best qualities and outstanding expertise of Swedish, Finnish, Norwegian and Danish cuisine,” said Michelin’s international director Michael Ellis in a statement.
The Main Cities of Europe 2014 guide, released on March 12, also handed out stars to three new restaurants from Denmark; two from Finland; two in Norway; and three in Sweden.
The Michelin Nordic Countries guide is slated to be released on April 15. – AFP Relaxnews
